"Opita" is an expression generally used to describe people from the department of Huila.
Grown in simple agroforestry, this cocoa comes from the Huila region, and more specifically from the Rivera terroir, where cocoa plantations are found alongside coffee, vine and sugar cane plantations.
Under the shade of wood and fruit trees, the cocoa is harvested by hand, before being fermented in wooden crates and then dried at a constantly controlled temperature.
