This Grade 4 coffee is collected, processed and exported by Hambella Flavor, a company we have been working with for several years now. Hambella Flavor has a number of washing stations in Ethiopia, including one in the Sidama region, from which this coffee comes.  

Hambella Flavor only works with producers close to the station, buying the cherries at a higher price than the market price, in order to encourage them and guarantee optimum quality. This attention to quality has won the company a number of awards over the past few years.

After being hand-picked, the cherries are sorted and spread out on raised beds to dry in the sun. This slow drying process allows the natural sugars in the fruit to ferment, resulting in a final cup with notes of red fruit, nuts and dark chocolate.

Woreda Sidama

This Sidama appellation (also called Sidamo in some translations) is divided into 4 areas distinguished simply by the letters A, B, C and D. Each of these four areas offers a specific cup profile. The Sidama A appellation is the one that offers a Sidama-type profile on account of its sweet cup with notes of yellow fruit (apricot, peach).

Each is linked to a specific geographical area delimited by administrative divisions. The Sidama A appellation extends to:
- the Guji area, comprising the woreda districts of OdoShakiso, Uraga, Hambela, Kercha, Adola and Anassora; and
- the Sidama area, comprising the districts of Bensa, Chire and Aroressa.

A few words about Hambella Flavor

Hambella Flavor is a coffee producer and exporter based in Ethiopia. Since the mid-2010s, Hambella Flavor and its founder Derartu Banata have been working with some of the finest coffees in the country. Hambella Flavor's coffee comes from its own farm, and from those of farmers near their various washing stations in the villages of Titira Goyo, Buku Sayisa, Buku Abel, Sike Bokosa and Uraga. 

Hambella Flavor favours sustainable and environmentally responsible farming and processing methods in order to achieve long-term growth. At the same time, the company is committed to improving the living conditions of all its partners, producers and their families by investing in education, health and local infrastructure.
