About this coffee

This coffee is harvested by the Jumarp cooperative in northern Peru. Mainly grown around the towns of Jaen and San Ignacio, the coffee trees benefit from the shade to develop slowly. It is a varietal blend of red caturra, red bourbon and typica, grown at altitudes of between 1200 and 1800 metres. 

This coffee is then decaffeinated with water by the Canadian company Swiss Water. Water decaffeination uses the principle of osmosis, whereby two solutions separated by a permeable membrane balance their caffeine concentrations, from the less concentrated medium to the more concentrated one.

The region Jaén

The Jaen region is that of Cajamarca, in north-eastern Peru, in the Quechua region between 2,300 and 3,500 metres above sea level. A very mountainous area, the province of Jaén covers 5,232.57 square kilometres, or 15.4% of the department. The terrain is varied and undulating, due to the marked contrast between the mountain ranges of the Western Andes, known as the "Andes del Chamaya" in this region, and the valleys and rivers Huancabamba and Marañon.

The main economic resource is agriculture, with rice, cocoa, maize and, of course, coffee. The region enjoys one of the best climates of the Peruvian Sierra departments, with a temperate, dry climate that is sunny during the day and cool at night. The average annual temperature is 16°C, with a rainy season from December to March. The main varieties grown here are Typica, Caturra and Bourbon. Jaén coffees are distinguished by their sweetness, their notes of red and yellow fruit and their acidity.
