Chemex is the iconic preparation method for speciality coffee. With a design that is unmistakable from any other method, it produces a slow, light-bodied extraction with a beautiful range of aromas to bring out the best in your coffee.

To make this recipe

Quantity for 6 cups

Coffee : 30g

Water : 500ml

Grinding : Medium-Coarse

Temp : 93 (°C)

Time : Between 3 min 30 and 4 min

Preparation

Heat the water and grind the coffee. Place your filter on the Chemex, making sure you have 3 layers of paper on the spout side and one layer on the other side. Rinse the filter with hot water to remove the taste of the paper, then empty the water from the Chemex. Pour the coffee into the Chemex and tare the scale.

Pre-infusion

Pour in 90g of water, taking care to wet all the grounds. Don't forget to start the timer.

2d pour

From 30 sec pour up to 300 g of water in a spiral (without touching the filter).

3 rd pour

From 1 min 30, pour in up to 500 g of water in a spiral (without touching the filter).

Enjoy!

Once the infusion is complete, remove the filter and stir the coffee to blend it. The result is a very light cup, like tea. Enjoy your coffee!
