José Libardo Diaz Toro has been working with coffee since he was just 18-years-old. Today, at 45, he continues to work the land alongside the youngest of his three sons, at their family farm called Arrayanes, which is located in the verdant coffee-producing municipality of Acevedo, in southern Huila. José has been farming at this property for almost 30 years.
Over the last six years, José Libardo has been learning about specialty coffee with Azahar’s quality manager in southern Huila, Gustavo Vega. He tried to prolong his post-collection fermentation stage for example or experimenting with a double fermentation approach like in this microlot.
